Sometimes we’re chasing after dogs and kids or rushing out the door to an early meeting. 

And other times the thought of a plate full of food is too much.

So make a big batch (or multiple batches) of these delicious and convenient breakfast finger foods. I know you’ll love them.

Chocolate Muffins

1. Banana Chocolate Chunk Muffins

My favorite on the list, these sweet and chocolatey muffins had to be number one. 

Adding ripe, mashed bananas to any muffin or cake will almost guarantee a moist crumb. 

Using maple syrup to sweeten and just a small amount of coconut flour, these are far healthier than they taste!

2. Blueberry Oatmeal Breakfast Bars

These unique breakfast bars are like oatmeal and blueberry blondies. 

They’re chewy, not overly sweet, and gluten-free if you can find the right oats. 

As with the above recipe, it uses banana for moisture and incorporates honey and blueberries to provide the extra sweetness. 

3. Cinnamon French Toast Sticks

Why should the kids have all the fun?

Made with a thick slice of white bread and rolled in a milk and egg custard mix, once cooked, they are crunchy on the outside and soft on the inside. 

Just don’t forget to roll the hot sticks in the cinnamon sugar, so it sticks.

4. Baked Hash Brown Cups

I love starting my day off with something savory and filling.

These hash brown cups totally fit that bill!

Made from shredded potato, bread crumbs, parmesan cheese, and some seasoning, they are great alone, but also the perfect little container for eggs, bacon, or sausage. 

5. Copycat Starbucks Petite Vanilla Bean Scones Recipe

As far as treats go, getting a grande caramel macchiato and a petite vanilla scone (or two) might be the thing I’ve missed most during the lockdown of 2020. 

The scone itself is super tender and crumbly, but the glaze has to be the star.

Though a simple mixture of cream, powdered sugar, and vanilla, seeing those little flecks across the top always warms my baker’s heart.

6. The Elvis Peanut Butter and Fried Banana Sandwich with Bacon

This sandwich is just about as indulgent as it comes and is not for the faint at heart.

Made with bananas, jam, peanut butter, and bacon, it’s a mouthful!

You may not want to make these too big, as they are pretty decadent.

Serve these warm with a cup of coffee to help wash it all down.

7. Blueberry Pancake Bites

Made in a donut hole pan, think of these just like little munchkins. 

The pancake batter will be quite liquid, so be careful when filling the holes. 

These get a blueberry in the middle, but you could try chocolate chunks, banana pieces, or strawberry slices, too.

If I’m going to go for a granola bar in the morning, I need it to be loaded with goodies, like nuts and dried fruits, and it has to include chocolate in there somewhere. 

These granola bars are packed full of oats, seeds, and dried fruits. But the best part has to be the chocolate base and drizzle. 

9. Sweet Potato Banana Bites 

Delicious and healthy, these little bites are made of just four main ingredients. 

After combining the mashed sweet potato and banana, you will stir in your favorite nut butter and two eggs.

Some excellent additions would be chocolate chips or candied orange peel.

10. Breakfast Casserole Bites

Casseroles make a fantastic option for breakfast, lunch, or dinner. 

Often made in just one dish, they have lots of elements and are warm and filling. 

These little bites are very similar, incorporating eggs with sausage, but they get cooked in cupcake liners for on-the-go eating.

11. Homemade Egg McMuffin

As far as gadgets go, my breakfast sandwich maker has to be one of my favorites. 

If you don’t have one, this recipe uses a microwave and ramekin to get that ideal round egg shape.

The great thing with these is that you can make multiple sandwiches and freeze them.

Pull one out and wrap it in a paper towel before microwaving for one to two minutes.

12. Chewy Banana Quinoa Bars

Vegan, gluten, and peanut-free, these bars are loaded with goodness. 

With the inclusion of quinoa, they are nutritional as well as flavorful. 

Feel free to add in any nut, seed, or dried fruit you prefer. And if peanuts aren’t an issue, a tablespoon or two of peanut butter wouldn’t hurt. 

13. Breakfast Cookies

Being a grown-up, I often forget I can have cookies for breakfast. Nobody can stop me, after all.

Logic often wins, though, and I’m stuck with bland cereal. But these cookies are a fantastic way to trick my mind into thinking it’s rebelling. 

Using dates and maple syrup for natural sweetness, they include oats, coconut, and flaked almonds for a great texture and crisp edge. 

I like to add dried mango to mine to go with the coconut.

14. Frittata Egg Muffins

If you like the idea of the breakfast cups but aren’t a fan of the potato in number four, this recipe is for you. 

You’ll have all the goodness of a frittata, baked into cupcake cups that can come along with you out the door. 

Banana Bread

15. Deliciously Moist Banana Bread Recipe

I will never not consider banana bread breakfast food. 

Yes, it’s sweet and has sugar and often chocolate inside (at least mine does), but it also has banana, and that makes it breakfast appropriate. 

This recipe freezes really well, so make two!

Scones with Pecan and Cranberry

16. Basic Scone Recipe 

Ask any Brit, and they’ll tell you that scones aren’t just for 4 o’clock tea time. 

This recipe is such a fantastic base, both tender and firm enough to hold some amazing fillings. 

Stick to the classic with raisins, jam, and cream, or go crazy with some cranberries and orange zest, or apple and cinnamon.

17. Breakfast Burrito

Another fantastic make-ahead breakfast, these will freeze when wrapped tight. Just pull one out the night before and heat up in the microwave.

Try something classic with sausage and egg, or take it up a notch with spiced potatoes and chorizo.

Toast is so underrated. Bread is already delicious, but cooking it twice is just magic!

Simply spread your bread with cinnamon and sugar butter and broil until golden brown.

The key is the cream cheese and ricotta mix for the texture and good strong cheese for flavor. I like to use Gruyere in mine.

Made using whole wheat flour, brown sugar, cinnamon, and applesauce, this vegan loaf is soft and best served warm. 

The recipe includes chopped walnuts and raisins, which you can easily switch out to your liking. I think pecans would complement the cinnamon very well.
